Egg Fried Rice

Everyone enjoys egg fried rice and a good time; Chinese New Year is a good reason to try it this week. So hunt out those chop sticks and be inspired.

Ingredients

  • 2 tsp oil
  • 2 eggs, beaten
  • 3 cups cold cooked rice
  • 1 tsp crushed garlic
  • 400g pkt Wattie's Wok Creations Hong Kong Mix
  • 1 tsp sesame oil
  • 1 Tbsp Gourmet Garden Mild Chilli
  • 1-2 Tbsp Gourmet Garden Coriander
  • 2 spring onions, sliced

Method

1. Heat the oil in a wok or large non-stick frying pan. Add beaten egg and cook for 1 minute stirring until it is soft scrambled. Remove and set aside.

2. Add in cooked rice, garlic, Wattie’s Wok Creations Hong Kong Mix ,sesame oil, Gourmet Garden Chilli and Gourmet Garden Coriander . Toss for about 5 minutes or until vegetables are cooked and everything is piping hot. Stir through cooked egg and serve garnished with spring onions.

Tip:

To make this a full meal, add 200g diced cooked chicken or diced ham when adding the vegetables.
