Here’s our take on a traditional Italian meatball soup, a meal in a bowl. Take the time to make the herb croutons to serve alongside - they are delicious!
Italian Meatball Soup

Meatballs
- 400g lean beef mince
- 1 tsp Gourmet Garden Garlic
- 1 Tbsp Gourmet Garden Italian Herbs
- 1/2 cup fresh breadcrumbs
- 1 egg

Soup
- 2 tsp oil
- 2 cups chicken stock
- 3/4 cup small sea shells pasta
- 410g can Wattie's Tomato Puree
- 2 Tbsp Gourmet Garden Italian Herbs
- 4 cups Wattie's frozen Romano Mix Vegetables
Method
1. In a bowl mix the meatball ingredients together and roll into small balls.
2. Heat the oil in a large saucepan and brown the meatballs. Pour in the stock, dried pasta, tomato purée and Gourmet Garden Italian Herbs and 2 cups water. Gently bring to the boil and simmer for 10 minutes, then add the Wattie’s frozen Romano Mix and continue simmering for a further 5-10 minutes or until vegetables are heated through.
Tip:
Tip: To make tasty croutons to serve with your soup. Mix 1 tsp each of oil, Gourmet Garden Garlic and Gourmet Garden Italian Herbs . Brush sliced bread with this mix and toast under a grill until hot and golden.
